Gingerbread Cookies Two Ways

Deep down, I wanted to make some glorious Christmas cookies with beautiful royal icing decorations, that would just impress the heck out of my friends and family.  And then I tried.  And there was a disconnect the size of the Grand Canyon between what I was hoping it would look like, and what it actually did. I had initially made some for me to decorate and for my son to decorate.  My son and his cousin had a blast decorating their gingerbread men cookies (center bottom picture), and that was worth the tedium of cutting out the shapes.  I tried a simple cookie glaze from King Arthur Flour on the ones in the bottom left because I had neither meringue powder, nor a desire to use raw eggs, and I thought they came out pretty cute, but the glaze was tricky to pipe.  Then, my wonderful brother and his girlfriend bought me meringue powder in exchange for a lesson on macaron making, so I tried my hand at royal icing (bottom right).  That was where my desire to make beautiful, royal icing cut out cookies ended in a ball of flames.  The icing colors, in spite of using lots of gel food color, came out pastel, it was still too runny, it took every bowl in my kitchen I had, I didn't have good tips that were small enough, the bottles I bought to ice with were too narrow of a neck, and I just completely lack creativity and patience.

I do not have the patience, or the creativity, or the time, or the money to put in to what can only be described as a labor of love.  So what to do with the 1-1/2 recipes of gingerbread cookie dough sitting in my fridge?  I took it out, shaped it in to a log, and made gingerbread slice cookies (like the shortbread and sugar cookies).  It took 5 minutes, one pan, almost no mess.  Then I made the simple cookie glaze, and just slathered it on them haphazardly and called it good (picture top center).  Much more my speed.  So, now that I have given an explanation to my cookie cutting and icing experience, I am giving you two ways to tackle these cookies, cut out or slice.  Do whatever floats your boat :)

One last word on these cookies:  They are good!  As in the best gingerbread cookies I have ever had, good.  If you roll them or cut them a bit on the thicker side, I think they come out even better, because then they have a little chew and substance.  They are bursting with flavor, and I have yet to give them to someone to try who has not loved them.  So whatever way you choose, I hope they find a wonderful place in your Christmas traditions.

GINGERBREAD COOKIES TWO WAYS
(Adapted from King Arthur Flour's Gingerbread Cookies)

Ingredients:
  • 3/4 cup unsalted butter
  • 3/4 cup brown sugar, packed
  • 3/4 cup molasses
  • 1 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 2-1/2 teaspoons ground ginger
  • 1/4 teaspoon ground allspice (or cloves)
  • 1/4 teaspoon ground nutmeg
  • 1 large egg
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 3 1/2 cups All-Purpose Flour
Eggnog Icing 
(Adapted from King Arthur Flour's Simple Cookie Glaze)
  • 2-1/4 cups powdered sugar
  • 2 tablespoons light corn syrup
  • 1 teaspoon vanilla extract
  • 1-1/2 to 2-1/2  tablespoons eggnog, as need for desired consistency  (use milk if you want plain vanilla icing)
  • Food coloring if desired
Directions:

1. Dough: In a medium microwave safe bowl, melt butter.
2. Transfer the butter to a medium-sized mixing bowl, then stir in the brown sugar, molasses, salt, and spices. let it cool to lukewarm, and beat in the egg.
3.In a small bow mix the baking powder, soda, and flour, and then stir these dry ingredients into the molasses mixture.
4. Divide the dough in half, and wrap well in parchment paper or saran wrap. Refrigerate for 1 hour or longer.
5. Preheat your oven to 350°F. Get out several baking sheets and line with parchment paper (for easy cleaning)
6. For Shaped Cookies: Once the dough has chilled, take one piece of dough out of the refrigerator, and flour a clean work surface, and the dough. Roll it out as thin or thick as you like; for slightly less crisp cookies, roll it out more thickly. 
7. Use flour under and on top of the dough to keep it from sticking to the table or rolling pin. Alternatively, place the dough on parchment, and put a sheet of plastic wrap over it as you roll, pulling the plastic to eliminate wrinkles as necessary when rolling; this will keep dough from sticking without the need for additional flour. For soft dough, or dough to be rolled extra-thin, you may choose to roll right onto the ungreased back of a baking sheet.
8. Cut out shapes with a cookie cutter, cutting them as close to one another as possible to minimize waste.
9. Transfer the cookies to ungreased cookie sheets (or, if you've rolled right onto the parchment, remove the dough scraps between the cookies). Bake the cookies just until they're slightly brown around the edges 8 to 12 minutes, or until they feel firm. Let the cookies cool on the baking sheets for several minutes, or until they're set. Transfer them to a rack to cool completely. Repeat with the remaining dough. 
10.  For Sliced Cookies: Once dough has chilled, take one piece of dough out of the refrigerator and roll it in to a log with your hands, about 6-8 inches long and 1-1/2 to 2 inches in diameter.  Using a sharp knife, cut 1/6 to 1/4 inch thick slices and place on a parchment lined baking sheet.  Bake until they are just slightly browned and firm around the edges, 8-10 minutes.  Cool for several minutes on the baking sheet and then transfer them to a baking rack to finish cooling.  Repeat with remaining dough.
11.  For Glaze: Mix the sugar, vanilla, and corn syrup in a bowl.  Mix in 1-1/2 tablespoons eggnog and stir well.  Add more 1 teaspoon at a time until desired consistency is reached.

13. Decorate the cookies as desired.

25 Christmas Cookies and Bars

 There are probably 20 different things I could have done a Christmas recipe collection on: drinks, brownies, pies, sides, main dishes, the list goes on and on.  Thanks to input I received, it seemed like cookies were the winner by quite a bit for a collection you all were interested in seeing.  So I set out to find not necessarily traditional Christmas cookies, but ones that would be a wonderful addition to holiday celebrations.  Some are from my blog, some are unique, some are classic, and some are just downright fun!  I found so many cookies I would have liked to include in this collection, I may have to do a part II someday.  Thank you for all the bloggers whose recipes were selected, your recipes are wonderful, and I am thrilled you have shared them on your blog for the world to enjoy!!

Giant Double Chocolate Chip Oreo Cookies

I bought a huge box of oreo cookies from Sam's Club to make the crust for the no bake nutella oreo cheesecakes, because it is cheaper to get a huge box at Sam's then a small one at the store. Of course, I only needed about two sleeves out of the 10 in the box, so I have had these haunting my cupboard for a while, begging to be used.  In dire need of making some chocolate chip cookies, I thought maybe I would use some up and through them in the cookie dough.  THEN I remembered I had white chocolate chips from a plan to make white chocolate macadamia nut cookies that never happened (macadamia nuts are EXPENSIVE!), so I thought I would throw those in to continue with the black and white theme.  And of course, who doesn't like a cookie the size of your hand?? It was a HUGE success!

These are chewy, chocolatey, sweet, a little savory, and just to die for.  Even my non-chocolate chip cookie loving husband has dived into the freezer several times since me making these last night.  They are bad news, and I will inevitably be 5-10 pounds heavier when they are finally gone.  Heck, even my 3 year old has been going around since yesterday going "Mommy, these are the best cookies you ever made..."  Best compliment ever :)

GIANT DOUBLE CHOCOLATE CHIP OREO COOKIES

Makes between 14-16 large (5-6") cookies

Ingredients:

  • 2 sticks of butter (1 cup), softened
  • 1 cup brown sugar, packed
  • 1 cup granulated sugar
  • 2 eggs
  • 1 Tbs. vanilla extract
  • 3 cups all purpose flour
  • 3/4 tsp. salt
  • 3/4 tsp. baking soda
  • 3 oz. (1/2 cup) semi sweet chocolate chips
  • 3 oz. (1/2 cup) white chocolate chips
  • 13 oreo cookies, broken into quarters or fifths
Directions:
  1. Preheat oven to 365 degrees F.  Line a baking sheet with parchment paper.
  2. In a medium bowl combine brown sugar, granulated sugar, and butter and cream together with a hand mixer until well combined.
  3. Add eggs and vanilla and mix thoroughly.
  4. Add flour, salt, and baking soda and mix well.
  5. Pour in chocolate chips, white chocolate chips, and combine by hand or with mixer.  Add in oreo pieces and gently fold in until evenly distributed.
  6. Using a 1/4 cup measuring cup, fill completely with dough and drop onto prepared pan, about 5 cookies per sheet, they get big.  Using the bottom of the measuring cup, press down the dough to flatten the center to about 1/2 inch for even cooking.
  7. Bake for 12-14 minutes until they start to brown on the edges.  They will still look a bit light in the center, but will darken and firm up when they cool.

Eggnog Shortbread Cookies

My husband loves the flavors of eggnog.  So when he asked me to come up with some eggnog inspired recipes, I jumped at the chance to make something he was interested in.  There will be many more eggnog attempts, but here is my first one.  These are buttery, tender, flaky, flavorful, slightly sweet shortbread cookies that melt in your mouth.  The glaze adds just that extra bit of sweetness for the perfect touch.  If you aren't a big fan of strong rum flavor, then by all means, reduce the extract by half for just a hint.  Want to make these super simple?-Just skip the step of adding cocoa powder to some of the dough to make the swirl, and just go right to shaping the dough in to a log and freezing.

Eggnog Shortbread Cookies
(Heavily adapted from The Joy of Baking's Shortbread Cookies)

Ingredients:
  • 1 cup (2 sticks) butter, softened
  • 1/4 cup powdered sugar
  • 1/2 cup brown sugar, packed
  • 1/2 teaspoon vanilla extract
  • 1-1/2 teaspoons rum extract
  • 1 egg yolk
  • 1-1/2 cups all purpose flour
  • 1/2 cup corn starch
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 teaspoon dutch process cocoa powder
Glaze:
  • 1 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • milk, cream, or water  
Directions:
  1. In a medium bowl  cream butter until smooth and creamy.  Add sugars and cream together for another minute, until smooth.  
  2. Add the egg yolk, vanilla, and rum and beat until incorporated well.
  3. Add the flour, corn starch, nutmeg, and salt and mix until just combined.
  4. Scoop out 1/2 cup of the dough into a small bowl and add the cocoa, mix until combined.
  5. One a large piece of parchment paper, dump the larger portion of dough into a mound in the middle, and flatten into approximately a 10x6 inch rectangle (10 long and 6 wide).
  6. Place the cocoa mixture on top of the dough square and smooth over it in as even a layer as possible.
  7. Using the parchment, grasp the paper nearest to you with two hands and fold the parchment away from you slowly, so that the dough starts rolling onto itself.  Continue to pull the paper away from you until the dough has been completely rolled into a tight log.  Carefully peel back the parchment so the dough log is now sitting in the middle.  Take a large piece of saran wrap and drape it over the top of the dough log and carefully pick it up and roll it up in the saran wrap, sealing the dough.  Twist the ends tightly so that it is a uniform log. 
  8. Place in freezer for 30 minutes to firm up.  After 30 minutes they can be take out for baking.  If you want to keep the dough frozen for another time, wrap it in one more piece of saran wrap and place in a ziploc bag and store in the freezer.
  9. To Bake: Preheat oven to 350 degrees F.  Line a baking sheet with parchment paper.
  10. Remove cookies from freezer.  Peel back saran wrap and slice into approximately 1/4 to 1/3 inch wide disks and place on prepared cookie sheet two inches apart.  If it is still to soft, place back in freezer until firm enough to slice.
  11. Bake for 10-12 minutes or until just slightly browned.  Cool on a wire rack. 
  12. To make glaze:  Mix the sugar, vanilla, and enough milk, cream, or water to create a glazed of desired consistency.  Drizzle over cookies once they are cool.

Makes approx. 25-30 cookies

Ingredients:
1 white cake mix
2 eggs
1/3 c. vegetable oil
3 Tbsp. water
8 crushed Oreo cookies
8 Oreos broken into 1/4 pieces
almond bark or white chocolate, melted

Directions:
1.  Mix together cake mix, eggs, oil and water until well combined.  Stir in crushed Oreos.
2.  Drop by spoonfuls onto cookie sheet.  Top with 1/4 piece of Oreo.
3.  Bake at 350 degrees for 10-12 minutes.  Let cool completely.
4.  Drizzle with almond bark or white chocolate. I used a cake decorating bag to pipe over the cookies.

Caramel Filled Pumpkin Pie Spiced Snickerdoodles

One of my favorite cookies are snickerdoodles.  I am the biggest cinnamon-sugar fan out there.  Second favorite non-chocolate thing?  Caramel!  So, naturally, why not combine the two?  And, to get in the holiday spirit, I thought some pumpkin pie spice might be a nice twist on the traditional cinnamon spice.  There is a secret ingredient in these too--brown sugar!  Yep, gives them a lovely chew, and a deeper flavor.  Can not go wrong with these, they are crispy on the edge, chewy on the inside, and caramelly goodness in the center.  These are pretty large cookies, and very satisfying.  I think these will be on my Thanksgiving menu for sure!!


Caramel Filled Pumpkin Pie Spiced Snickerdoodles
(Snickerdoodle recipe adapted from Better Homes and Gardens 75th Anniversary cook book)

Makes 36 large cookies

Ingredients:
  • 1 cup butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cream of tartar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 3 cups all purpose flour
  • 1/2 cup granulated sugar
  • 1-1/2 teaspoons pumpkin pie spice
  • 36 Kraft caramels, unwrapped
 Directions:
  1. In a medium mixing bowl beat butter with an electric mixer on medium to high for 30 seconds.
  2. Add the 1 cup granulated sugar, brown sugar, baking soda, and cream of tarter and beat until combined, scraping down sides occasionally.
  3. Beat in eggs and vanilla until combined well.
  4. Beat in the flour until well combined.
  5. Cover the dough and refrigerate for 15-60 minutes, or until easy enough to handle.  
  6. Preheat oven to 375 degrees F and line a baking sheet with parchment paper.
  7. Mix the 1/2 cup granulated sugar and the pumpkin pie spice in a small bowl.  Using a 1-1/2 tablespoon cookie scoop, scoop out a level scoop full of dough and place the ball in your hand.  Gently flatten the dough and place a caramel in the center.  Wrap the dough around the caramel completely, and finish rolling it in to a round ball.  Roll in the spice and sugar mixture to coat, and place on a cookie sheet lined with parchment. Place 9 cookies on a sheet at a time, spacing them evenly.
  8. Bake for 11-12 minutes, or until the edges start to brown.
  9. Let cool on the parchment until the caramel is solidified a bit before transferring to a cooling rack.

Fudgy Peanut Butter Chip Cookies

Ok. For WEEKS I have been craving something just utterly chocolatey, sweet, savory, chewy and yummy.  I have looked through hundreds of recipes and could not decide.  Do I make brownies?  Cookies?  Candy?  Well, I decided!  I found a recipe for Flourless Fudge Cookies on King Arthur Flour.  I have made them before with regular chocolate chips, and they are like fudgy brownies in cookie form.  Absolutely the richest chocolate cookie I have ever had.  I thought that this time, to get some of that savory in there, I would add some Reese's peanut butter morsels.  OH. MY. GOSH!  These are like a killer peanut butter cup cookie.  I won't lie, these are dangerous.  What is even more dangerous about them, they take about 5 minutes to whip up, if that, and 8 minutes to cook.  in 13 minutes you can be in peanut butter chocolate bliss.  AND they are waist line friendly, at only about 80 calories a cookie. 

This is by far one of my favorite cookie recipes of all times.  My son even helped me make these tonight, perfect cookie for little ones, since it doesn't require a long attention span from start to finish.

FUDGY PEANUT BUTTER CHIP COOKIES
(Adapted from King Arthur Flour's Flourless Fudge Cookies)

Makes approximately 36 cookies

Ingredients:
  • 2 1/4 cups confectioners' sugar
  • 1/4 teaspoon salt
  • 3/4 teaspoon instant coffee granules, optional but tasty
  • 1 cup cocoa powder, Dutch-process
  • 3 large egg whites
  • 2 teaspoons vanilla extract
  • 1 package (10 oz.) Reese's peanut butter morsels
 Directions:
  1. Pre-heat oven to 350 degrees F.  Lightly grease two baking sheets, or line them with parchment paper and lightly grease the parchment.
  2. Using a hand mixer, mix everything together except the peanut butter morsels.  Scrape down the bottom and sides and mix again.  Add the peanut butter morsels and mix in gently.
  3. Using a 2 teaspoon cookie scoop, scoop out dough (more like a batter) onto the prepared cookie sheets.  Flatten the cookies out slightly to even distribute the morsels.
  4. Bake in oven for 8-9 minutes, until they spread, are slightly shiny, and start to crackle a little bit on top.  They should be slightly firm to the touch.
  5. Let cool on cookie sheet.

Heavenly Cookie Bars

I have been dying for some sweet, salty, chewy, and very chocolatey cookies lately, but have frankly been too lazy, and too busy (bad combo) to do anything about it.  One of my favorite bloggers, Sweet Pea's Kitchen, happen to post a  recipe for Thick and Chewy Chocolate Chip Cookie Bars.  It was exactly what I was looking for.  All the yummy of cookies, without slaving over an oven repeatedly putting in and taking out sheets of cookies.  It mixes up quick, didn't even need a mixer, just a whisk (BIG bonus!!) and bakes up in no time.  The only modification I made was that instead of all chocolate chips, I added chocolate chips, butterscotch chips, and then pretzel pieces, and then some whole pretzels on top just for presentation points. 

They truly are heavenly.  Sweet, salty, chocolaty, crunchy, chewy, seriously, just heavenly.


Heavenly Cookie Bars
(Adapted slightly from Sweet Pea's Kitchen's Thick and Chewy Chocolate Chip Cookie Bars)

Makes 1- 9x13 pan, cut into 24 or 32 slices

Ingredients:

2 ⅛ cups all-purpose flour (10 1/2 ounces)
1/2 teaspoon table salt
1/2 teaspoon baking soda
12 tablespoons unsalted butter (1 1/2 sticks), melted and cooled slightly
1 cup light brown sugar (7 ounces)
1/2 cup granulated sugar (3 1/2 ounces)
1 large egg
1 large egg yolk
2 teaspoons vanilla extract
1 cups semi sweet chocolate chips
1 cup butterscotch chips
3 oz. mini pretzels, half broken into small pieces, half kept whole for the top

Directions:
  1. Pre-heat oven to 325 degrees F.  Line a 9x13 inch baking pan with parchment paper, with ends extending up the sides (will be for easy removal later).
  2. In a medium bowl whisk together flour, salt, and baking soda and set aside.
  3. In a large bowl, mix together with a whisk, the melted butter, brown sugar and white sugar until combined.
  4. Add egg, egg yolk, and vanilla and mix well.
  5. Using a spoon or spatula, mix in dry ingredients into the egg and butter mixture until just combined.
  6. Mix in the chocolate chips, butterscotch chips, and broken pretzel pieces and mix well.
  7. Scoop into the prepared pan, using a spatula to press it down evenly into the pan.  Place the whole pretzels on top in a decorative pattern (I used 24 evenly spaced ones, so when they are cut, there would be 24 servings, each with a pretzel on top) and press down slightly.
  8. Bake for 27-32 minutes, until the top is light brown, slightly firm to the touch and the edges start to pull away from the sides.
  9. Remove from oven and let cool on a wire rack to room temperature.  Using the parchment paper, lift the bars out, cut into 2-inch squares and serve.

Soft Pumpkin Molasses Cookies

A few days ago my dad emailed me asking if I had any goodies laying around that he could bring to a work meeting the next day.  Sadly, I didn't, but heck, that wasn't going to stop me from sending him well armed!  I made some of my pumpkin cinnamon rolls and while they were rising, I was trolling my favorite blogger's facebook posts and saw that Sweet Pea's Kitchen had just minutes before put up a recipe for pumpkin gingersnap cookies.  They looked amazing, and I had exactly the amount of pumpkin left over from the rolls, so I decided "what the heck!" I'll throw these in for good measure too if they turn out.  Well, Sweet Pea's Kitchen has yet to disappoint, they were out of this world amazing!!  I sent them to work with my dad the next day, and from what I hear, they were well received :) (As in, there were none left to bring home). Here is my take on hers, with just a few tweaks.  Hope you enjoy!

Oh yea, they were so good, I have made three total batches this week :)

Soft Pumpkin Molasses Cookies
(Adapted from Sweet Pea's Kitchen's Pumpkin Gingersnap Cookies)

Ingredients:

1/2 cup of butter (1 stick), softened 
1/2 cup granulated sugar
1/2 cup brown sugar, packed
1 large egg
1/2 cup of pure pumpkin 

1/4 cup of molasses
1 teaspoon vanilla extract
2-1/3 cups all-purpose flour
2 teaspoons baking soda

1/2 teaspoon baking powder
2 teaspoons cinnamon
1-1/2 teaspoons ground ginger
1/4 teaspoon ground allspice

1/4 teaspoon ground nutmeg
1/2 teaspoon salt


Coating:

1 1/2 tablespoons pumpkin pie spice
1/4 cup granulated sugar 


Directions:

  1. In a large bowl, whisk together flour, baking soda, cinnamon, ginger, allspice, nutmeg and salt; set aside. 
  2. In the bowl of a stand mixer fitted with a paddle attachment, or with a hand mixer, cream the butter and the brown and granulated sugars at medium speed until light and fluffy.
  3. Scrape down the sides of the bowl with a rubber spatula as needed. Add the egg and beat at medium speed until combined, about 30 seconds.
  4. Add the pumpkin puree, molasses and vanilla and beat at medium speed until combined, about 30 seconds.
  5. Add the dry ingredients and beat at low speed until just combined, about 30 seconds, scraping down the bowl as needed. Refrigerate the cookie dough for at least 1 hour. The dough can be chilled for 2-3 days.
  6. Heat the oven to 350 degrees F. Line two baking sheets with parchment paper; set aside.
  7. Place the 1/4 cup sugar and pumpkin pie spice for rolling in a shallow bowl, mix well to combine. 
  8. Roll a heaping tablespoon of dough into a 1½-inch ball (I use a 1-1/2 tablespoon cookie dough scoop), roll the ball in the sugar mixture, and place it on the prepared baking sheet.  
  9. Repeat with the remaining dough, spacing the balls about 2 inches apart.  Using your fingers or a spoon or fork, gently flatten the dough balls to about 1/2-3/4 inch thick, as they do not spread much.  Bake the cookies, one sheet at a time, until the edges are set and cookies look cracked, 10 to 12 minutes.
  10. The cookies will come out flatter and denser the warmer they get, so for the most fluffy, pretty cookies, try to keep the dough chilled between batches.
  11. Cool the cookies on the baking sheets about 3 minutes; using a wide metal spatula, transfer the cookies to a wire rack and cool to room temperature.

Apple Pie Mookies

I really liked my chocolate chip banana mookie recipe.  Mookies, in case you are not familiar with my previous post, are what I dubbed this cross between a cookie and a muffin.  These are fluffy, slightly cakey cookies, with just a phenomenal hearty texture.  When I started to think about what other kinds of "mookies" I could make, I must have had apples on the brain.  Thus, apple pie mookies were born.  With oats, hearty chunks of apples, wonderful warm apple pie spices, and butterscotch chips, these just scream cozy fall day.  And considering it is 95 degrees out, I could very much use a mental escape to a more pleasant season.  The apples are softened but juicy, and a tart contrast against the sweet butterscotch chips.  Slightly chewy oats give way to a fine, cakey crumb.  Seriously, I don't know how many ways to describe the awesomeness except to say you just have to try them.

Let me just say, my house smells beyond amazing right now.  If I could eat the air I would.  But I guess I will settle for eating these cookies instead.  And at just around 100 calories each, I can afford to have a couple!  

These are absolutely a must try.  Really, seriously, in the stratosphere tasty.


APPLE PIE MOOKIES

Makes approximately 34-38 mookies

Ingredients:
  • 1/2 cup salted butter, softened
  • 1/2 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 3/4 cup unsweetened applesauce
  • 1 large egg
  • 1-1/2 tsp. vanilla extract
  • 1-1/4 cups all purpose flour
  • 1/4 cup almond meal (if you don't have or don't want to use, add an extra 1/4 cup flour)
  • 1 tsp. salt
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground allspice
  • 1/4 tsp ground ginger
  • 1-1/2 cups old fashioned oats
  • 1 cup tart apples, diced and peeled (like granny smith)
  • 6 oz (1 cup) butterscotch chips
Directions:

  1. Preheat oven to 375 degrees.  Line a cookie sheet with parchment paper.
  2. Whisk together flour, almond meal, salt, baking soda, cinnamon, nutmeg, allspice, and ginger in a small bowl and set aside.  
  3. Place butter, and sugars into a mixing bowl and beat on medium speed until they are well combined.  Depending on how soft the butter is, it may take several minutes for the mix to come together.
  4. Reduce speed to low.  Add egg, applesauce, and vanilla and mix until combined.   Beat for 1 minute on medium until well combined.
  5. Add flour and spice mix and mix on medium until well combined and fluffier.  
  6. Mix in oats, apple pieces and butterscotch chips with mixer or by hand until well incorporated. Don't fear, this dough is very moist.
  7. Using a 1 1/2-inch ice cream scoop or 2 Tbs cookie scoop, drop dough onto baking sheets spacing about 2 inches apart.  Using a fork, flatten the dough into a disk shape, they do not spread much.
  8. Bake cookies until they just start to turn golden brown and just set, about 12 to 13 minutes. The centers will be fairly firm, like a cooked muffin, when done.

Chocolate Chip Butterscotch Pretzel Cookies

Sweet, salty, chewy, crunchy, chocolatey, savory, butterscotchy, and just plain addictive.  That is how I will describe what is probably my most favorite version of chocolate chip cookies.  I know you may think that adding pretzels to chocolate chip cookies may seem way too weird to try, but think about it for a second--salted caramel is all the rage right now, think of it like that.  The pretzels add a pleasant burst of saltiness and a suprising little crunch every so often.  It is heavenly.  Try them.  Try them please!  They will change your thoughts on chocolate chip cookies forever.

These are dangerous to have in my house, I love them so much.  The freeze beautifully, so I am putting my batch in the freezer to 1) slow down my consumption (out of sight out of mind) and 2) keep them fresh for a long time.

CHOCOLATE CHIP BUTTERSCOTCH PRETZEL COOKIES

Makes between 40-46 cookies

Ingredients:
  • 2 sticks of butter (1 cup), softened
  • 1 cup brown sugar, packed
  • 1 cup granulated sugar
  • 2 eggs
  • 1 Tbs. vanilla extract
  • 3 cups all purpose flour
  • 3/4 tsp. salt
  • 3/4 tsp. baking soda
  • 6 oz. semi sweet chocolate chips
  • 6 oz. butterscotch chips
  • 1.5 oz mini pretzels or thin pretzel sticks, broken into bite sized pieces
Directions:

  1. Preheat oven to 375 degrees F.  Line a baking sheet with parchment paper.
  2. In a medium bowl combine brown sugar, granulated sugar, and butter and cream together with a hand mixer until well combined.
  3. Add eggs and vanilla and mix thoroughly.
  4. Add flour, salt, and baking soda and mix well.
  5. Pour in chocolate chips, butterscotch chips, and pretzel pieces and combine by hand or with mixer.
  6. Using a #40 cookie scoop (1 1/2 Tbs.), drop onto prepared pan, about 12 cookies, 2 inches apart.
  7. Bake for 9-11 minutes until they start to brown on the edges.  They will still look a bit light in the center, but will darken and firm up when they cool.

Chocolate Chip Banana Mookies

No, I didn't spell cookies wrong, I know what you're thinking.  I really mean mookies.  Muffin cookies.  That is what these are.  They are not completely cookie, nor are they muffin.  Hence, mookies.  They are slightly chewy on the edges, soft and fluffy in the middle, chocolaty to a heavenly degree, full of banana flavor, and just all around divine.  I have been yearning for a banana cookie recipe for so long.  I am kind of tired of banana bread and banana muffins, but man, I never get tired of cookies!  The perfect portable, freezable package.  I found a recipe for chocolate chip banana cookies from Six Sister's Stuff.  I must say they have fantastic recipes.  This is based on their recipe chocolate chip banana cookies.

The changes I made to it were two fold.  I first added unsweetened applesauce for 1/3 of the butter called for.  This gave them their more muffin/cake-like texture.  I also added 1/2 cup extra of old fashioned oats, just because at our house, we love oatmeal cookies.  If you want more cookie-like cookies, then by all means, head on over to their site and use the recipe as written, they will taste phenomenal, and I will not be offended in the least bit.

Chocolate Chip Banana Mookies

1 1/2 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon baking soda
1/2cup unsalted butter, softened
1/3 cup unsweetened applesauce
1/2 cup granulated sugar
1/2 cup packed light brown sugar
1 egg
1 1/2 teaspoons pure vanilla extract
1/2 cup mashed ripe banana (about 1 large)
1 1/2 cups old-fashioned rolled oats
2 cups chocolate chips

Directions:
  1. Preheat oven to 375 degrees.  
  2. Whisk together flour, salt, and baking soda in a small bowl and set aside.  
  3. Place butter, and sugars into a mixing bowl and beat on medium speed until pale and fluffy. 
  4. Reduce speed to low.  Add egg, applesauce, and vanilla and mix until combined.   
  5. Mix in banana.  Add flour and mix until just combined.  
  6. Stir in oats and chocolate chips. Don't fear, this dough is very moist.
  7. Using a 1 1/2-inch ice cream scoop or 2 Tbs cookie scoop, drop dough onto baking sheets spacing about 2 inches apart.  Using a fork, flatten the dough into a disk shape, they do not spread much.

Chewy Oatmeal Cookies

I hate oatmeal.  Like the mushy, soupy, texture like its already been chewed kind of oatmeal.  So when I was told I needed to eat oatmeal to help with nursing my 10 month old, I had to find a more palatable way to ingest it.  So here it is.  Chewy, crisp, airy oatmeal cookies.  This is an oatmeal bandwagon I can be all over :)  I got this recipe from my favorite guilty pleasure, King Arthur Flour.  I modified the Oatmeal Cookie recipe just a tad to up the oatmeal factor, and the health factor (these tasty morsels only have 64 calories each!)

Recipe:


  • 1/2 cup (8 tablespoons) unsalted butter
  • 1/2 cup light brown sugar
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 1/4 teaspoons ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 teaspoon cider or white vinegar (put it in, you won't be sorry)
  • 1 large egg
  • 1/2 teaspoon baking soda
  • 1/2 cup King Arthur Unbleached All-Purpose Flour
  • 1/4 Oat Bran (I got mine from Trader Joe's)
  • 1 1/2 cups rolled oats, quick cooking or old-fashioned
  • 1 cup golden raisins, optional (I don't do raisins, but feel free.  Chocolate chips are good too)
Directions:



1) Preheat the oven to 350°F. Lightly grease (or line with parchment) two baking sheets, light-colored preferred.

2) Beat together the butter, shortening, sugars, vanilla, cinnamon, nutmeg, salt, and vinegar until fairly smooth; a few tiny bits of butter may still show. 

3) Beat in the egg, again beating until smooth. 

4) Add the baking soda, oat bran, and flour, beating until well incorporated. 

5) Add the oats (and raisins), stirring to combine.

6) Drop the dough by 2 tsp (#60 cookie scoop)  balls onto the prepared baking sheets. Space the cookies 2" apart; they'll spread.

7) Bake the cookies for 11-12 minutes, reversing the pans halfway through (top rack to bottom, bottom to top). For softer cookies, bake the lesser amount of time; for crunchier, the longer amount. 

8) Remove the cookies from the oven, and let them cool right on the pan.

Yield: Approx. 34 cookies.

Chewy Chocolate Chip Peanut Butter Cookies

I love peanut butter.  I have a serving-a-day habit and see no signs of stopping.  I love chocolate chip cookies.  I couldn't find a recipe that gave me the peanut butter flavor with the chocolate chip cookie texture that I loved.  Well, I am happy to say, I managed to marry the best of both worlds.  Enjoy!

PS-If you are adventurous, add some mini Reese's peanut butter cups, or peanut butter chips.  YUM!

Lindsay's Chewy Peanut Butter Chocolate Chip Cookies


 Servings: 36

Cooking Times:
Preparation Time: 10 minutes
Cooking Time: 10 minutes

Oven Temperature: 375°F

INGREDIENTS:

1 1/4 cup brown sugar - (packed)
3/4 cup white sugar
1 stick butter, softened
2/3  cup peanut butter
2 eggs
1 1/2 teaspoon vanilla extract
2 1/2 cups flour
3/4 tsp baking soda
3/4 tsp salt
12 oz package semi-sweet chocolate chips



DIRECTIONS:

1. Cream together brown sugar, white sugar, peanut butter and butter.

2. Add the eggs and vanilla and mix well.

3. Add the flour, baking soda and salt and mix well.

4. Mix in the chocolate chips.

5. Drop by rounded spoonful onto an ungreased cookie sheet or a cookie sheet lined with parchment paper and bake for 10-12 minutes at 375 degrees until golden brown along the edges.
