I don't have a lot to say other than "MAKE THIS!! And make A LOT!" because it will be gone before it even sets up all the way, I guarantee it. I am a die-hard toffee fan, second only to my love of chocolate truffles, and this stuff has blown my idea of toffee out of the water. It is the perfect blend of sweet, caramel goodness, and salty blissful savoriness. Really, match made in heaven. I really ate probably a tenth of the tray before the chocolate even solidified. I must get this out of the house, lest I gain ten pounds because I ate it all by tomorrow. I know the pictures are not great, but I was afraid if I waited until tomorrow, there may be nothing left to take a picture of.<br />

Ingredients:<br />

15 graham cracker sheets</li>
<li>1 cup (2 sticks) butter</li>
<li>1 cup brown sugar</li>
<li>1/2 teaspoon sea salt</li>
<li>1/2 teaspoon vanilla extract </li>
<li> 2 cups semi-sweet chocolate chips</li>
<li>1-1/2 cups crushed pretzels </li>
</ul>
Directions:<br />

<ol>
<li>
Preheat oven to 400 degrees.</li>
<li>Line a baking sheet with aluminum foil. </li>
<li>Lay the graham cracker sheets side by side in the pan, it should end up being five across and three rows long.</li>
<li>In a saucepan, melt the butter, salt, and brown sugar over medium heat. Bring
it to a boil and let it boil for three minutes without stirring. After
three minutes, remove from heat, add the vanilla and stir in quickly, then pour the hot brown sugar mixture evenly over the graham crackers. Use the spoon to spread it out a bit if needed.</li>
<li>Bake in the preheated oven for 5-7 minutes, until bubbly.</li>
<li>Remove from oven and sprinkle with the chocolate chips. Let them melt for a few minutes and then use a knife or spatula to carefully spread the chocolate out evenly over the toffee.</li>
<li>Sprinkle with the crushed pretzels and press them in to the chocolate slightly.</li>
<li>Let it cool completely on the counter or in the fridge. When set, break the toffee into two-bite pieces and enjoy!</li>
<li>Store in an air tight container for 1-2 weeks or in the freezer for a few months (HA! Like there will be any left to store....). </li>

Deep down, I wanted to make some glorious Christmas cookies with beautiful royal icing decorations, that would just impress the heck out of my friends and family. And then I tried. And there was a disconnect the size of the Grand Canyon between what I was hoping it would look like, and what it actually did. I had initially made some for me to decorate and for my son to decorate. My son and his cousin had a blast decorating their gingerbread men cookies (center bottom picture), and that was worth the tedium of cutting out the shapes. I tried a simple cookie glaze from King Arthur Flour on the ones in the bottom left because I had neither meringue powder, nor a desire to use raw eggs, and I thought they came out pretty cute, but the glaze was tricky to pipe. Then, my wonderful brother and his girlfriend bought me meringue powder in exchange for a lesson on macaron making, so I tried my hand at royal icing (bottom right). That was where my desire to make beautiful, royal icing cut out cookies ended in a ball of flames. The icing colors, in spite of using lots of gel food color, came out pastel, it was still too runny, it took every bowl in my kitchen I had, I didn't have good tips that were small enough, the bottles I bought to ice with were too narrow of a neck, and I just completely lack creativity and patience.<br />
<br />
I do not have the patience, or the creativity, or the time, or the money to put in to what can only be described as a labor of love. So what to do with the 1-1/2 recipes of gingerbread cookie dough sitting in my fridge? I took it out, shaped it in to a log, and made gingerbread slice cookies (like the shortbread and sugar cookies). It took 5 minutes, one pan, almost no mess. Then I made the simple cookie glaze, and just slathered it on them haphazardly and called it good (picture top center). Much more my speed. So, now that I have given an explanation to my cookie cutting and icing experience, I am giving you two ways to tackle these cookies, cut out or slice. Do whatever floats your boat :)<br />
<br />
One last word on these cookies: They are good! As in the best gingerbread cookies I have ever had, good. If you roll them or cut them a bit on the thicker side, I think they come out even better, because then they have a little chew and substance. They are bursting with flavor, and I have yet to give them to someone to try who has not loved them. So whatever way you choose, I hope they find a wonderful place in your Christmas traditions.<br />

Use flour under and on top of the dough to keep it from sticking to the

sticking without the need for additional flour. For soft dough, or dough
to be rolled extra-thin, you may choose to roll right onto the

I have been on a quest to find eggnog goodies to make for my husband, because he loves eggnog. This was my second attempt at it. Thanks to Inside BruCrew Life's <a href="http://insidebrucrewlife.com/2011/12/eggnog-latte-cupcakes/" target="_blank">Eggnog Latte Cupcakes</a>, I was able to give him a treat that made him go back for seconds! I was going to make more of my <a href="http://mommyssweetconfessions.blogspot.com/2012/12/easy-apple-pie-turnovers.html" target="_blank">Easy Apple Pie Turnovers</a> last night to have for breakfast this morning, but by the time the kids were in bed, the dishes done, the toys picked up, and the elf on the shelf set up, I had no ambition left. Unfortunately, I had half a can of apple pie filling left over that I refuse to waste, so I decided to do one large apple braid, using the same exact ingredients, just a different form of the turnovers.<br />
<br />
This was quick, easy, and I think even tastier than the turnovers (which is saying something!). I think it was the addition of the turbinado sugar over the top. It added that lovely sugar crunch that you get with store bought ones sometimes, and it was incredible.<br />

<li><span style="font-size: small;">Line a baking sheet with parchment paper. Lightly dust with flour. Place the puff pastry dough on the baking sheet. Using a rolling pin, roll out in to a rectangle approximately 10 x 15 inches (it will be maybe 1/8 inch thick or thinner). </span></li>
<li><span style="font-size: small;">Using a pastry wheel, knife, or pizza cutter, trim the edges to form a nice rectangle, and then cut 3<span style="font-size: small;">/4 inch <span style="font-size: small;">wide strips that are about 3 inches long into the long sides of the <span style="font-size: small;">pastry, cu<span style="font-size: small;">tting in towards the center, and on the short ends, cut 2, 2 inch long strips towards the center on each side.</span></span></span></span></span></li>
<li><span style="font-size: small;"><span style="font-size: small;">Using a knife, I chop the apple pieces in the pie filling into smaller pieces, right in the can.</span></span> <span style="font-size: small;">Spoon the fil<span style="font-size: small;">ling <span style="font-size: small;">down the uncut <span style="font-size: small;">portion of the dough in the center.</span></span></span></span></li>
<li><span style="font-size: small;"><span style="font-size: small;"><span style="font-size: small;"><span style="font-size: small;"><span style="font-size: small;"><span style="font-size: small;">Starting at one end, <span style="font-size: small;">fold in the ends over the filling<span style="font-size: small;"> and cross them over each other. Then start folding the strips on the side in towards the center, alternating sides, making sure to cross them over each<span style="font-size: small;"> other slightly. Repeat until you reach the other end, and then <span style="font-size: small;">fold the two end <span style="font-size: small;">pieces back towards the center, crossing each<span style="font-size: small;"> other.</span></span></span></span></span></span></span></span></span></span></span> </span></li>
<li><span style="font-size: small;">Using the beaten egg, brush the ent<span style="font-size: small;">ire pastry</span> with the egg wash. Sprinkle the <span style="font-size: small;">tur<span style="font-size: small;">binado sugar over the top of the pastry liberally.</span></span></span></li>
<li><span style="font-size: small;">Place the tray in the freezer for 30 minutes.</span></li>
<li><span style="font-size: small;">Preheat the oven to 350 degrees F.</span></li>
<li><span style="font-size: small;">After 30 minutes, place the tray into the oven for 45-55 minutes, or until golden brown and puffy.</span></li>
<li><span style="font-size: small;"><b>Make the glaze: </b></span>In a bowl mix the powdered sugar, vanilla, and corn syrup. Add the apple juice one tablespoon at a time, until the desired consistency is reached for the glaze. </li>
<li><span style="font-size: small;">After the braid comes out of the oven and has cooled slightly, drizzle with glaze, and enjoy warm.</span></li>

My son spent all of yesterday asking for pop tarts. He has never had a store pop tart, and I wasn't going to go buy him one. I decided I would try a homemade pop tart with some puff pastry I had leftover in my freezer from the last time I made puff pastry. I know he likes apple, so I made it easy on myself and used the can of apple pie filling I had in my cupboard (I know, I know, you can make it from scratch, but hey, I made the pastry part, and they are called "easy," so something has to give). I searched for homemade pop tart recipes and came across Smitten Kitchen's recipe. I used it as a guide and inspiration more than anything, but it is always nice to have a plan. Once I made them, I decided that no matter how I worded it, I just could not legitimately call these pop tarts. The crust was just too puffy and flaky and buttery. So, I opted for the more likely accurate description of turnover.<br />

So, after all the work I put into making these , I presented my son with one this morning, very excited for him to exclaim that this is the best thing he ever had, and instead he turned his nose down at it and proclaimed his dislike for pop tarts. Crushed me, totally crushed me! And then later my husband tried one, said they were amazing, and the world was right again. I had one, and yes, they are pretty fantastic.<br />

I made this with my easy puff pastry recipe from a previous post, but of course, if you have frozen store bought dough, then use what you've got of course. <br />

We LOVE bread in my family. I am always looking for new ones to try. While browsing my facebook news feed I saw a post for a lovely challah bread. The baker inside me was inspired to make this beautiful bread, so I took off to my favorite bread baking site, King Arthur Flour, and sure enough, they have a lovely Classic Challah bread recipe. I had received some Red Star Platinum yeast as a freebie a month or two ago, and had been saving it for a sweeter bread, and decided to give it a go. My husband saw it as I was putting it in the oven, and was so excited, he is a huge fan of challah bread, and couldn't believe I was giving making it a try. That made me very happy to see him so enthusiastic about it. Now the pressure for it to turn out was really on though :)<br />

This dough was very stiff, even though I measured everything by weight, and in hindsight I should have added a tad bit more water probably. It was around 72 degrees F. today in my house, and after 3 hours it hadn't really risen at all. I warmed up the oven, then put it in there and let it rise another 45 minutes, and it finally got puffy. probably not doubled, but enough. I proceeded with the recipe, and it worked perfectly fine. I think my kitchen was just too cold.<br />

This is the most beautiful bread I think I have ever made, and the flavor reminded me of the King's Hawaiian Sweet Rolls, just like 1,000 times better. I am in love with this bread. Slightly sweet, lovely crust, and incredibly tender and light inside. Can not go wrong! I did not alter the recipe hardly at all, except for the addition of diastatic malt powder to help with the rising, and some sesame seeds on top, because my husband loves sesame seeds on his bread. I also left the directions as written on King Arthur Flour's recipe (see link under the title for the original recipe and more pictures), because I want to make sure that you all get the best information and directions for making this labor of love.<br />

and took closer to 3-4 hours to even rise barely double, but it still

Divide the dough into four pieces, and shape each piece into a rough 6"
log. Cover the logs with lightly greased plastic wrap or a proof cover,
and let rest for 10 minutes.</span></span></span></li>

I have been craving something chocolatey. Like that luscious, smooth, melt in your mouth heavenly chocolatey. After seeing a run of wonderful looking fudge recipes, I decided to venture into uncharted territories for me, and try my hand at fudge. I did lots of research, called my mom and asked about her fudge recipe she has been using for as long as I can remember, and took to my favorite bloggers' sites. What has resulted is kind of a mish-mash of parts of each of the recipes I saw, inspiration, if you will, for this recipe.<br />

It turned out better than I could have ever hoped. It was silky smooth fudge, studded with lovely little bits of oreo and candy cane pieces, and not overwhelming on the peppermint either. Super easy to make, and just down right addictive. <br />

<span style="font-size: x-small;">(Inspired by Something Swanky's <a href="http://www.somethingswanky.com/peppermint-oreo-fudge/#sthash.M45yvh8V.2neUc1Ku.dpbs" target="_blank">Peppermint Oreo Fudge </a>and highly adapted from Chocolate, Chocolate, and More's <a href="http://www.chocolatechocolateandmore.com/2012/12/milk-chocolate-fudge.html" target="_blank">Milk Chocolate Fudge)</a></span><br />
<br />
Ingredients:<br />
<br />
Chocolate Oreo layer: <br />
<ul>
<li>3 cups semi sweet chocolate chips</li>
<li>1 can sweetened condensed milk (14 oz)</li>
<li>2 tsp vanilla extract</li>
<li>2 cups broken up oreo cookies (left in reasonably large chunks)</li>
<li>1/2 of a 7 oz. jar marshmallow fluff</li>
</ul>
White Chocolate Candy Cane Layer:<br />
<ul>
<li>3 cups white chocolate chips</li>
<li>1 can sweetened condensed milk (14 oz)</li>
<li>1/2 tsp peppermint extract</li>
<li>1 cup crushed peppermint candy canes</li>
<li>1/2 of a 7 oz. jar marshmallow fluff</li>
</ul>
Topping (optional):<br />
<ul>
<li>crushed oreo cookies</li>
<li>crushed candy canes</li>
</ul>
Directions:<br />
<ol>
<li>Line a 9x13 baking dish with parchment paper and set aside.</li>
<li>In a medium sauce pan over LOW heat, melt the semi sweet chocolate chips with the can of sweetened condensed milk.</li>
<li>Once this is smooth and completely melted, remove from heat, add the vanilla extract and the marshmallow fluff and stir until completely combined.</li>
<li>Add the oreo cookie pieces and stir until evenly distributed. Pour into prepared pan and spread evenly over the bottom.</li>
<li>In another sauce pan melt the white chocolate chips with the condensed milk until smooth and completely melted.</li>
<li>Remove from heat and mix in the peppermint extract and the marshmallow fluff until well combined.</li>
<li>Add in the candy cane pieces and mix until evenly distributed.</li>
<li>Pour this mix over the chocolate oreo layer in the baking dish, and spread in an even layer.</li>
<li>If desired, sprinkle with crushed oreo cookies or candy cane pieces, or both.</li>
<li>Place in fridge until set, about 4 hours or over night.</li>
<li>Cut in to pieces and enjoy. Keep refrigerated. </li>

I was browsing Pinterest's Food and Drink category as I often do when I want to get a good drool on, and I came across a pin for <a href="http://www.highheelsandgrills.com/2012/10/honey-butter-pull-apart-rolls.html" target="_blank">Honey Butter Pull Apart Rolls</a> from High Heels and Grills. I wanted to make some bread today, and after reading the recipe, I was sold! Within 15 minutes of finding the recipe, I was already making the dough. This recipe is easy to do, doesn't take too long, and the rolls are unbelievably light, soft, tender, tasty, and slightly sweet. I am addicted. I will make these for family gatherings, snacks, breakfasts, midnight munching, Christmas dinner...there is no event I wouldn't make these for. I modified this recipe very, very little, I mean, how do you mess with perfection?<br />

<li>1-1/2 cups warm water </li>
<li>1 Tbsp. instant yeast</li>
<li>1 tsp. diastatic malt powder (optional) </li>
<li>2 Tbsp. sugar</li>
<li>2 Tbsp. vegetable oil</li>
<li>1-1/2 tsp. sea salt</li>
<li>3-1/2 to 4 cups all-purpose flour</li>
<li>3 tablespoons salted butter, melted</li>
<li>3 Tbsp. honey</li>
<li>3/4 tsp. salt</li>
</ul>

<span style="font-size: medium;">Directions:</span></div>
<ol>
<li>In a large bowl, mix together water, yeast, diastatic malt powder (optional), sugar, oil, salt, and 3-1/2 cups of flour. Using a spoon, your hands, or a stand mixer, mix until well combined (I just did this and the kneading by hand, worked great).</li>
<li>Stir in more flour as need (1/4 cup at a time), until the dough has
pulled away from the sides of the bowl, is no longer sticky, and you are able to work with it to knead it.</li>
<li>Turn out onto a lightly floured surface and knead until fairly smooth and elastic, about 8 minutes, adding a tablespoon of flour or two if needed, to keep it from sticking.</li>
<li>Place the dough back in the large bowl it was mixed in, spraying some non stick spray or lightly oiling the bowl before returning the dough to it. Cover with a damp cloth; let rise in a warm place until doubled in size.</li>
<li>After doubled, punch down dough and lay on floured surface. </li>
<li>Preheat oven to 375°F.</li>
<li>Roll dough out until about 20 inches by 12 inches.</li>
<li>In a small bowl, combine butter, honey, and salt. Brush dough with half of the butter mixture.</li>
<li>With a pizza cutter, cut dough lengthwise into sixths and crosswise into twelfths. Make stacks of 4 dough squares and place each stack into a greased muffin tin cup.</li>
<li>Brush with the remaining butter mixture.</li>
<li>Let these rise until they are visibly puffier, about 20 minutes. </li>
<li>Bake for 14-16 minutes or until golden brown. </li>
<li>Serve warm.</li>

All right, I will be the first to admit these cupcake reindeers look a little disturbed, and lack a huge amount of artistic talent, but hey, I had fun, and they at least give a good laugh, right? Maybe these are reindeer after they got in to a bunch of Santa's eggnog.<br />
<br />
Mastrad, Inc., a French company specializing in culinary accessories, was kind enough to send me a pack of six silicon heart shaped baking cups for me to try out and review. At first, I was a bit perplexed as to what I could do with them, since it wasn't Valentine's Day, but then I started thinking, and thought that maybe, just maybe, I could make some reindeer cupcakes out of them. If you squint your eyes a little, you can see how one could get a face in the center of the heart, and then the rounded parts kind of the antler section. I have used silicon bakeware before, and sadly was not very impressed, so I was a little skeptical of how silicon baking cups would work, but I was still very excited, and within a few hours of receiving them, I was ready to put them to the test!<br />
<br />
Here is what they look like when they arrive. A cute little box of pretty red cups, about the size of the palm of my hand. They are made of thin, silicon material, and the sides can be folded down in half to make a tart sized cup (which I will be giving a try next with something chocolate related). The line to fold them also marks where to fill them too as well.<br />

I put them on a baking sheet, and filled them to the line marked on the cups, no guess work here! I filled them with an eggnog cake batter (which will be my next post). They didn't bend or spill, or anything. I also did not spray the cups with any non stick spray.<br />

I baked them along side a traditional cupcake pan to compare baking times (I am a chemist, so I have to take a scientific approach to this). They baked at 350 degrees F. (they are oven safe up to 480 degrees F.) Below is what they looked like when they came out of the oven. They rose perfect, did not over flow, but were plenty big. they cooked in the same amount of time as the traditional pan as well.<br />

When I took them out of the cups, all I had to do was peel the sides away, turn it over, and tap it a few times on the bottom and it came right out. Not a single one stuck to the cup, and they came out beautifully. <br />
<br />
Here is how I decorated them. I colored a bit of the buttercream frosting with some black food coloring to outline the face, and put pretzel pieces for the antlers, mini marshmallows for the eyes, and a chocolate chip nose. All in all, I thought they were a great use of the heart shaped cups. The best part is, they fit perfectly in a regular cupcake liner after you take them out, so you can just pop them in the paper liners and store them that way. <br />
<br />
Overall I was very impressed with these, despite being skeptical at first. I will be using these again for sure. The only drawback to them is that there are only 6 in a package, so it will take several batches of baking to get through one batch of batter. Otherwise, they performed as described.<br />

I haven't made many appetizer kind of items, and I don't usually make decadent savory items, because we try to be on a calorie conscious diet here, but sometimes, we just want something rich, cheesy, and sinful. I thought I would surprise my husband with these garlic cheese twists since her loves Italian bread sticks, and cheese straws. I am not ambitious enough, nor do I have the time to try and do puff pastry the traditional way, so I thought I would give King Arthur Flour's Fast and Easy Puff Pastry Dough a try. It did not disappoint. It was fast, and easy, and baked up flaky, butter and tender. Definitely worked great, and I can't wait to make something sweet like apple turnovers with the dough next. I made a double batch of pastry dough, and now I have one batch in the freezer just waiting to be used. What could be easier??<br />

parchment, if you have it; otherwise, just get out a baking sheet, no

<li><span id="Instructions">Sprinkle cheese over half of the dough, and then sprinkle the garlic salt over the same half, to taste (I like a hint of garlic, so I go light, but go heavier if you like it more).</span></li>
<li><span id="Instructions">Fold the dough half without filling on top of the piece with filling, making a 12" square.</span></li>
<li><span id="Instructions"><span id="Instructions">Gently roll till the two halves stick together; you'll now have a rectangle about 12" x 13".</span></span></li>

Directions:<br />

<li><span id="Instructions">Add the butter, working it in to make a coarse/crumbly mixture. Leave most of the butter in large, pea-sized pieces.</span></li>
<li><span id="Instructions"><span id="Instructions">Stir in the yogurt; the dough won't be cohesive. Turn it out onto a
floured work surface, and bring it together with a few quick kneads (if it still doesn't come together, add a little bit of milk).</span></span></li>
<li><span id="Instructions"><span id="Instructions"><span id="Instructions">Pat the dough into a rough log, and roll it into an 8" x 10" rectangle. </span> </span></span></li>
<li><span id="Instructions"><span id="Instructions"><span id="Instructions">Dust both sides of the dough with flour, and starting with a shorter end, fold it in three like a business letter.</span> </span></span></li>

I had so much fun doing my <a href="http://mommyssweetconfessions.blogspot.com/2012/11/25-christmas-cookies-and-bars.html" target="_blank">25 Christmas Cookie Collection</a>, that I decided I would do another one featuring those wonderful savory dishes of the season. Thanks to input I received, <span style="font-size: small;">it seemed like cookies were the winner by quite a bit for a collection you <span style="font-size: small;">all were interested in seeing. I owe my mom and dad a big thank you though, because they got me a food photography "How-To" book, that I immediately read upon receiving. I had to make something today so that I could try out all the tips, so that was really motivating my baking today. Sadly, by the time I was done baking, I had lost almost all the daylight, but I worked with what I had, I will have more chances to practice. <li><span style="font-size: small;">Line a 9x13 in. baking dish with parchment paper. Make sure it extends up all four sides. Preheat oven to 350 degrees F. </span></li>
<li><span style="font-size: small;">In a medium bowl cream butter until smooth and creamy. Add sugars and cream together for another minute, until smooth. </span></li>
<li><span style="font-size: small;">Add the vanilla and beat until incorporated well.</span></li>
<li><span style="font-size: small;">Add the flour, corn starch, and salt and mix until just combined.</span></li>
<li><span style="font-size: small;">Using your hands or a spatula, press the dough into the prepared pan until it is evenly distributed. </span></li>
<li><span style="font-size: small;">Bake for 18-22 minutes, until lightly golden.</span></li>

between 242 and 245 degrees F. Cook for 2
minutes at that temperature. Remove from the heat and stir in vanilla. </span> </span></li>

Ah, the taste of cheesy, tender, slightly salty, buttery, garlicky biscuits...like the ones that you get from that famous seafood restaurant.... Most of us know which one I am speaking of. Well, my husband has never had the pleasure of trying their rolls, which I think is the only reason to go there frankly. I made some cheesy straws a few days ago, and my husband turned to me after eating ones and said "I would be doubly happy if you could make these into rolls!!" Well, my husband very rarely requests anything, so I jumped up from my chair (literally) and started pondering how I could do this. Then it came to me--these taste just like that seafood restaurant's biscuits, and there are copycat recipes I have seen. Of course, I looked through all my bookmarks, thinking surely I had marked it down once out of the 100 times I saw it, but of course I didn't. After not being able to find it, I turned to my wonderful Facebook friends, and they helped point me in the right direction. Since I did not have bisquick baking mix, I had to find a recipe that didn't need it. I finally settled on Food Networks Almost-Famous Cheddar Biscuits recipe. After making some changes to the recipe to make it closer to the cheese straws I made, and having now devoured one in like 2 seconds flat, I can say that I am so happy with how they turned out! I think they are better than that seafood restaurant's.<br />

These biscuits are tender, cheesy, not too salty, and have a light and fluffy interior. Absolutely perfect. I packed one in my husbands lunch, so I am anxiously waiting to hear what he thinks of them, but I am pleased with them. These would be a beautiful addition to Thanksgiving dinner as well! They only take a few minutes to throw together, and only 16 minutes to bake. Nice and simple! <br />

<li itemprop="ingredients">1 tablespoon plus 2 teaspoons baking powder

<li itemprop="ingredients">2 1/2 teaspoons sugar
</li>
<li itemprop="ingredients">1/4 teaspoon salt
</li>
<li itemprop="ingredients">7 tablespoons cold unsalted butter, cut into 1/2-inch pieces
</li>
<li itemprop="ingredients">4 ounces grated colby jack cheese (about 1 cups) </li>
<li itemprop="ingredients">1 ounce grated fresh Parmesan cheese </li>
<li itemprop="ingredients">1/3 cup 2% evaporated milk, or regular milk </li>
<li itemprop="ingredients">1/2 cup nonfat plain Greek yogurt </li>
</ul>

Directions:<br />
<ol>
<li>Preheat oven to 425 degrees F. Line a baking sheet with parchment paper or spray with non-stick cooking spray.</li>
<li>To make the biscuits, mix the flour, baking powder, sugar, and salt in a medium mixing bowl. Add the butter and cut in with a fork or your fingers, until you have pea sized pieces of butter throughout. Add the colby jack cheese and parmesan cheese and mix together. Add the yogurt and milk and mix until the dough just comes together, it will have some dry bits. </li>
<li>Drop by scant 1/4 cup portions onto baking sheet, 2 inches apart, and flatten slightly. </li>
<li>Bake in oven for 15-17 minutes, or until golden brown.</li>
<li>Right before they are done, melt the butter in a a small microwave safe dish. When the biscuits come out of the oven, brush the tops with a bit of butter and sprinkle with garlic salt. Serve warm.</li>

I bought a huge box of oreo cookies from Sam's Club to make the crust for the <a href="http://mommyssweetconfessions.blogspot.com/2012/11/no-bake-nutella-oreo-cheesecake-cups.html" target="_blank">no bake nutella oreo cheesecakes</a>, because it is cheaper to get a huge box at Sam's then a small one at the store. Of course, I only needed about two sleeves out of the 10 in the box, so I have had these haunting my cupboard for a while, begging to be used. In dire need of making some chocolate chip cookies, I thought maybe I would use some up and through them in the cookie dough. THEN I remembered I had white chocolate chips from a plan to make white chocolate macadamia nut cookies that never happened (macadamia nuts are EXPENSIVE!), so I thought I would throw those in to continue with the black and white theme. And of course, who doesn't like a cookie the size of your hand?? It was a HUGE success!<br />

These are chewy, chocolatey, sweet, a little savory, and just to die for. Even my non-chocolate chip cookie loving husband has dived into the freezer several times since me making these last night. They are bad news, and I will inevitably be 5-10 pounds heavier when they are finally gone. Heck, even my 3 year old has been going around since yesterday going "Mommy, these are the best cookies you ever made..." Best compliment ever :)<br />
<br />
<b><u>GIANT DOUBLE CHOCOLATE CHIP OREO COOKIES </u></b><br />
<br />
Makes between 14-16 large (5-6") cookies<br />
<br />
Ingredients:<br />
<br />
<ul>
<li>2 sticks of butter (1 cup), softened</li>
<li>1 cup brown sugar, packed</li>
<li>1 cup granulated sugar</li>
<li>2 eggs</li>
<li>1 Tbs. vanilla extract</li>
<li>3 cups all purpose flour</li>
<li>3/4 tsp. salt</li>
<li>3/4 tsp. baking soda</li>
<li>3 oz. (1/2 cup) semi sweet chocolate chips</li>
<li>3 oz. (1/2 cup) white chocolate chips</li>
<li>13 oreo cookies, broken into quarters or fifths</li>
</ul>
Directions:<br />
<ol>
<li>Preheat oven to 365 degrees F. Line a baking sheet with parchment paper.</li>
<li>In a medium bowl combine brown sugar, granulated sugar, and butter and cream together with a hand mixer until well combined.</li>
<li>Add eggs and vanilla and mix thoroughly.</li>
<li>Add flour, salt, and baking soda and mix well.</li>
<li>Pour in chocolate chips, white chocolate chips, and combine by hand or with mixer. Add in oreo pieces and gently fold in until evenly distributed.</li>
<li>Using a 1/4 cup measuring cup, fill completely with dough and drop onto prepared pan, about 5 cookies per sheet, they get big. Using the bottom of the measuring cup, press down the dough to flatten the center to about 1/2 inch for even cooking.</li>
<li>Bake for 12-14 minutes until they start to brown on the edges. They
will still look a bit light in the center, but will darken and firm up
when they cool. </li>

For my son's first birthday party we decided to just do a dessert bar. One of the desserts that made the cut were these killer Nutella Oreo Cheesecake cups that I saw on My Baking Addiction. Because we had like 12 different desserts, I made them pretty small, as you can see in the picture, but it was perfect for getting to try everything. If you are doing it for a dessert spread, then you could get about 12 small servings out of this. If you are like me and don't want anything more than to dive into a pool of this filling, then make 6 larger cups :) This even converted my non-sweets lovin' husband to nutella, he was sold!<br />

I really can't say much more about the amazingness of these other than go. Just go. Go and make them right now, you won't be sorry! They were by far the favorite dessert provided at the party, so much so, that I was requested to make them for another family member's surprise party. They were a hit there too.<br />

<span style="font-size: large;"><u><b>NO BAKE NUTELLA OREO CHEESECAKE CUPS</b></u></span><br />

Makes 12 small cups (for like a dessert sampler) or 6 larger ones<br />
<br />
Ingredients:<br />

<li>24 oreo cookies</li>
<li>8 ounces cream cheese, softened </li>
<li>8 ounces frozen whipped topping, thawed</li>
<li>1 teaspoon vanilla extract</li>
<li>3/4 cup nutella spread</li>
</ul>
Topping:<br />
<ul>
<li>4-5 crushed oreos for sprinkling (optional)</li>
<li>whipped cream (optional)</li>
<li>shaved chocolate (optional)</li>
</ul>
Directions:<br />
<ol>
<li> Crush the 24 oreo cookies in a ziploc bag or in a food processor until coarse ground. Evenly distribute cookie crumbs between the cups.</li>
<li>In a medium bowl, use a hand mixer to beat the cream cheese, nutella, and vanilla together until lightened, smooth, and fluffier. </li>
<li>Using a spatula, carefully fold in the whipped topping into the nutella and cream cheese mixture until it is well combined and there are no more streaks.</li>
<li>Pipe or spoon the filling into the prepared cups on top of the oreo crumbs., dividing evenly. </li>
<li>Right before serving, top with whipped cream, oreo crumbs, and chocolate shavings. Serve cold.</li>

My husband loves the flavors of eggnog. So when he asked me to come up with some eggnog inspired recipes, I jumped at the chance to make something he was interested in. There will be many more eggnog attempts, but here is my first one. These are buttery, tender, flaky, flavorful, slightly sweet shortbread cookies that melt in your mouth. The glaze adds just that extra bit of sweetness for the perfect touch. If you aren't a big fan of strong rum flavor, then by all means, reduce the extract by half for just a hint. Want to make these super simple?-Just skip the step of adding cocoa powder to some of the dough to make the swirl, and just go right to shaping the dough in to a log and freezing.<br />

<li>1-1/2 cups all purpose flour</li>
<li>1/2 cup corn starch</li>
<li>1/2 teaspoon ground nutmeg</li>
<li>1/4 teaspoon salt</li>
<li>1 teaspoon dutch process cocoa powder</li>
</ul>
<span style="font-size: small;">Glaze:</span><br />
<ul>
<li><span style="font-size: small;"><span style="font-size: small;">1 cup po<span style="font-size: small;">wdered sugar</span></span></span></li>
<li><span style="font-size: small;"><span style="font-size: small;"><span style="font-size: small;">1/2 teaspoon vanilla extract</span></span></span></li>
<li><span style="font-size: small;"><span style="font-size: small;"><span style="font-size: small;">milk<span style="font-size: small;">, cream, or water</span> </span></span> </span> </li>
</ul>
Directions:<br />
<ol>
<li>In a medium bowl cream butter until smooth and creamy. Add sugars and cream together for another minute, until smooth. </li>
<li>Add the egg yolk, vanilla, and rum and beat until incorporated well.</li>
<li>Add the flour, corn starch, nutmeg, and salt and mix until just combined.</li>
<li>Scoop out 1/2 cup of the dough into a small bowl and add the cocoa, mix until combined.</li>
<li>One a large piece of parchment paper, dump the larger portion of dough into a mound in the middle, and flatten into approximately a 10x6 inch rectangle (10 long and 6 wide).</li>
<li>Place the cocoa mixture on top of the dough square and smooth over it in as even a layer as possible.</li>
<li>Using the parchment, grasp the paper nearest to you with two hands and fold the parchment away from you slowly, so that the dough starts rolling onto itself. Continue to pull the paper away from you until the dough has been completely rolled into a tight log. Carefully peel back the parchment so the dough log is now sitting in the middle. Take a large piece of saran wrap and drape it over the top of the dough log and carefully pick it up and roll it up in the saran wrap, sealing the dough. Twist the ends tightly so that it is a uniform log. </li>
<li>Place in freezer for 30 minutes to firm up. After 30 minutes they can be take out for baking. If you want to keep the dough frozen for another time, wrap it in one more piece of saran wrap and place in a ziploc bag and store in the freezer.</li>
<li>To Bake: Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.</li>
<li>Remove cookies from freezer. Peel back saran wrap and slice into approximately 1/4 to 1/3 inch wide disks and place on prepared cookie sheet two inches apart. If it is still to soft, place back in freezer until firm enough to slice.</li>
<li>Bake for 10-12 minutes or until just slightly browned. Cool on a wire rack. </li>
<li>To make glaze: Mix the sugar, vanilla, and enough milk, cream, or water to create a glazed of desired consistency. Drizzle over cookies once they are cool.</li>

After days of bland food, I was just dying for some flavor. And when I think of big, bold flavor, I think of Mexican food, tacos, chilies, and enchiladas. I thought about making enchiladas, but I was too lazy to want to roll them all up. I thought about making parmesan baked potatoes since I have a bag sitting in my pantry just waiting to go bad (Ok, not Mexican food, but would have had flavor). I thought about tostadas, because what is easier than heating up a can of refried beans in the microwave and spreading it on tostada shells and dumping a bottle of hot sauce on it. I thought about taco meat, but I really didn't want just a bowl of it all by its lonesome. So, in some convoluted whirlwind epiphany, my brain threw them all together and came up with this five layer enchilada bake. I guess five layers depends on how you count, so don't give me too much grief if you have a different opinion on the number of layers, I had to name it something, right? Since we don't cook with cottage cheese in my house, I was trying to think of something to use to simulate that satisfying, creamy layer, and decided potatoes would possibly fit the bill. I know you may think it is strange, but just try it, I promise, you won't be disappointed. It is a little bit of enchilada, meets taco, meets tostada, and man was I happy with what they did when they all came together!<br />
<br />
I tried to time my preparation of this so that it would still be warm when my husband got home from school. Thought I would surprise him with a meal that consisted of more than toast or cereal. He walked in the door, walked right over to the stove, turns around and says "Is this something I would like? It looks like something I would like!" I told him that I thought it was dang tasty, so hopefully he would too. Needless to say, he gave it rave reviews. <br />
<br />
This is a hearty, satisfying meal, and it is pretty quick to make, especially if you are making it to use up leftover taco meat. If that is the case, then you will have it in the oven just a few minutes longer than however long it takes to nuke the potatoes.<br />
<br />
<span style="font-size: large;"><u><b>Five Layer Enchilada Bake</b></u></span><br />
<br />
Makes 6 large portions or 9 smaller portions.<br />
<br />
Ingredients:<br />
<ul>
<li>9 corn tortillas (6 inch)</li>
<li>1 can refried beans</li>
<li>2 medium potatoes (about 5 ounces each-I used 2 red potatoes)</li>
<li>1 (4 ounce) can diced green chilies</li>
<li>12 ounces cooked taco meat (leftovers, or ground turkey/ground beef prepared with your favorite taco seasoning)</li>
<li>4 laughing cow original light wedges</li>
<li>4 ounces shredded colby-jack cheese</li>
<li>1 (15 to 16 oz.) can red enchilada sauce</li>
<li>salt and pepper to taste</li>
</ul>
Directions<br />
<ol>
<li>If you do not have leftover taco meat, cook ground turkey/ground beef and add your preferred taco seasoning and set aside.</li>
<li>Wash potatoes, poke several times with a fork and place on a microwave safe plate. Microwave until fork tender.</li>
<li>Preheat oven to 375 degrees F. In an 8x8 or 9x9 baking dish, pour 1/4 to 1/2 cup of enchilada sauce in the bottom, enough to cover in a thin layer.</li>
<li>Place three tortillas on top of the sauce, tearing and arrange as needed to completely cover.</li>
<li>Heat the refried beans in the mircowave until hot. Spread them evenly over the tortillas. </li>
<li>Cover the beans with another 3 tortillas, once again breaking up as needed to completely cover beans.</li>
<li>Once potatoes are done cooking, scoop the flesh into a small bowl. Add the 4 laughing cow wedges and the diced green chilies. Season with salt and pepper to taste. Mix well. Spread this layer over evenly over the tortillas.</li>
<li>Evenly distribute the cooked taco meat over the potato layer. Cover in one more layer of three tortillas, once again breaking them up as needed for complete coverage.</li>
<li>Pour on desired amount of enchilada sauce to cover tortillas, and then spread the shredded cheese evenly over the top.</li>
<li>Place in preheated oven for approximately 30 minutes, or until the cheese is browned and bubbly and it is hot all the way through.</li>
<li>Let sit 5-10 minutes before serving.</li>

<u>Directions:</u><br />
1. Mix together cake mix, eggs, oil and water until well combined. Stir in crushed Oreos.<br />
2. Drop by spoonfuls onto cookie sheet. Top with 1/4 piece of Oreo.<br />
3. Bake at 350 degrees for 10-12 minutes. Let cool completely.<br />
4. Drizzle with almond bark or white chocolate. I used a cake decorating bag to pipe over the cookies.<br />

We love pizza in my house. I am always trying to figure out new, easy, tasty ways to make pizza-like dishes. These pull apart rolls I found from King Arthur Flour looked easy, tasty, and fun, so I thought I would give them a try. They did not disappoint! The dough is more biscuit like then bread like, and it is moist and tender on the inside, a little bit crisp on the outside and full of flavor. Add on top of that all the delicious fillings, and it is sure to be a winner! <br />

Fill the center of each square with 1/4 teaspoon tomato sauce/pizza sauce, a few pieces of chopped basil, several
pieces of quartered pepperoni (about 6 little quarters or 1-1/2 slices total), and a quarter of a piece of string cheese or heaping teaspoon of mozzarella. </span></div>

Place the dish in the fridge for 45 minutes to improve the
